so friday night b did his best to recreate cauliflower zahara and the veggie sandwich. it was sooo good.
1 head cauliflower, sliced 1/4″ thick
1 zucchini, 1/4″ cut like fries
3 medium carrots, 1/4″ cut like fries
In hot saute pan, add a few tablespoons of olive oil. Add enough cauliflower to cover the bottom. Sprinkle with garlic pepper, paprika, thyme and salt. Flip cauliflower once it has a good seer (should not take long if oil is hot enough, otherwise it will become soggy). sprinkle with a little more paprika. Drizzle with lemon juice. Pull out and put on paper towel to absorb some oil.
Repeat for the remainder of the cauliflower, then carrots, then zucchini, adding oil when needed.
Stuff veggies in pita pockets (I toast them in the oven with a metal spoon turned sideways to keep them propped open once crisp) with hummus and some feta cheese. Possibly add a little fresh lemon on top if you have it and enjoy.
Big key is to have the pan hot enough to sear the veggies without making them sweat and become soggy. Still not bad either way.
